These pistachio cookies, garnished with dark chocolate, are crumbly, mouthwatering cookies. Perfect friandises for after dinner with a coffee or any time of the day for a sweet and pleasant treat.
INGREDIENTS: Around 32 Cookies
● 70 g of pistachio paste
● 120 g of soft butter
● 140 g of brown sugar
● 150 g granulated sugar
● 2 eggs at room temperature
● 1 teaspoon vanilla extract
● 380 g of flour
● 80 g shelled pistachios
● 1 pinch of salt
● For the decoration
● 150 g chopped dark chocolate
● pistachio granules
1.- To prepare the pistachio cookies, gather in the bowl of the planetary mixer the two types of sugar, the pistachio paste and the butter soft. Work with the K whisk on low speed until amalgamate. Add the eggs, vanilla extract and operate the the whisk again just enough to incorporate.
2.- Add the sifted flour with the baking soda, salt and mix again at low speed with the k whisk. Add last the coarsely chopped pistachios and mix to combine.
3.- Using your hands, take small amounts of dough and form small spheres about 3 cm in diameter that you will arrange, appropriately spaced, on 2 baking sheets lined with baking paper.
Squish them lightly and place in the refrigerator to rest for 30 minutes. After this time has elapsed, bake the cookies in the oven preheated to 170°C for 15 minutes. Take them out of the oven and let them cool completely before removing them from the pan.
4.- Melt the broken dark chocolate in a bain-marie or in the microwave, in this case on maximum power, stirring every 30 seconds with a spoon until completely melted.
Partially dip the cooled cookies in it and allow them to drip very well the excess. Arrange them by hand on a cookie sheet with baking paper and immediately sprinkle with the pistachio granules.
Scoop the remaining melted chocolate, pour it into a sac à poche disposable and make a tiny hole in it. Use it to decorate the cookies with thin diagonal strands. Place the pistachios until the chocolate has solidified.
