Pumpkin Cream

The perfect typical autumn recipe based on natural products is pumpkin cream. It is a warm, creamy and spicy soup perfect for the first cold days.

Here is the recipe:

600 g pumpkin
200 g potatoes
80 g white onions
1 l vegetable broth
black pepper
fine salt
extra virgin olive oil
cinnamon powder
nutmeg

Preparation:

Heat the vegetable broth and clean the pumpkin in the meantime.
Remove the outer skin and seeds, then cut into cubes of about 4 or 5 centimeters.

Then peel the potatoes and cut them the same size as well.
Clean and chop the onion, then put it in a saucepan with the oil and brown it.

Then combine the pumpkin and potatoes and add the broth until it almost covers the vegetables.
Keep what’s left over.

Season with salt and pepper, then bring to a boil over high heat, then lower and leave
cook for another 10 minutes.

With an immersion blender, blend until you obtain a smooth and homogeneous cream, then combine
cinnamon and nutmeg and mix. Here’s your cream of soup!
