Spaghetti alla Siciliana

Talking about Italy means talking about pasta, however, many people only know a few of the many varieties that are made in the country. Here we bring you a different version to surprise your family and friends with the flavors of Sicily that is also easy and quick to cook!

350 gr Spaghetti
• 1 eggplant
• 2 cloves of garlic
• 1 small spring onion
• Capers
• 200 gr cherry tomatoes
• 6 anchovies fillets
Black olives
Extra virgin olive oil
• White pepper
• Salt
• 2 ripe tomatoes


How to cook
Cut the eggplant into small cubes and put it in a bowl with water and salt.

In a saucepan, put the finely chopped spring onion and the whole garlic. Chop the capers and anchovies, and when the onion starts to fry over low heat, add the mixture.

Stir a couple of times and add the eggplant. When it is frying over low heat, add the grated tomato.

We put the pasta to cook.

Let it reduce well and add the halved cherries.

When it is well cooked, add the olives and a ladle of cooking water.

Let it reduce, add the pasta and another ladle of water.

Stir well, turn it a few times, add some chopped parsley and serve.
