Sicilian Cannoli

It is a typical sweet from the Italian region of Sicily, where it originates. It consists of a tube-shaped rolled dough with ingredients mixed with ricotta cheese inside. But if you prefer you can buy the ready cannoli and just make its filling.

For the dough 

• 130 gr flour
• 1 beaten egg
• 5 tablespoons Marsala +1 tablespoon vinegar alcohol or apple cider vinegar
• 1 tablespoon bitter cocoa
• 10 g sugar
• 1 pinch of salt

• 500 g ricotta
• 100 grs powdered sugar
• Grated zest of 1 orange
• Grated chocolate to taste

Step 1
Dough: make a crown with the dry ingredients, add Marsala, vinegar and egg. Form a soft dough and take to the cold 30′-60′. After resting, roll out with a rolling pin or pastry dough until it reaches a thickness of 1 mm.

Step 2
Cut squares of 10×10. Wrap the molds and fry.
Molds: you can join 2 corks with a toothpick. But you can also cut a piece of broom wood of 10 cm or buy the molds in bakeries.

Step 3
Filling: mix the ricotta with the zest and sugar. If you like it creamy you can beat it with a mixer and you will get a firmer and creamier texture. At the end add the chocolate, set aside until filling. The filling is made when it is going to be eaten, otherwise the dough will get wet and it will not be delicious. You can sprinkle with powdered sugar, add pistachios, almonds, chopped walnuts.
